BULGUR PILAF A LA JUDGE REDMON 
1/2 c. chopped green onions
1/2 lb. sliced mushrooms
1/2 c. diced celery
1/2 c. diced green pepper, optional
2 tbsp. butter
1 c. bulgur
2 c. chicken stock

Saute chopped green onions, mushrooms, celery, and green pepper in 2 tablespoons butter until brown. Stir in 1 cup bulgur. Stir for 1 minute. Add 2 cups chicken stock and bring to boil, stirring constantly. Cover and place in 350 degree oven for 20-25 minutes.
