CUCUMBER SOUP 
2 lg. cucumbers, peeled, seeded and minced
2 c. chicken flavored broth
1 tsp. salt
2 tbsp. minced parsley
3 tbsp. corn oil butter
3 tbsp. minced onion
2 c. milk or half & half
4 tbsp. flour
Pinch of pepper, cayenne, nutmeg

Simmer cucumber and onion 3 minutes. Add parsley. Cover and braise over low heat for 5 minutes. Stir to prevent scorching. Sprinkle with flour and stir until flour is absorbed. Add broth and milk and simmer covered for 10 minutes. Add spices and simmer 2 to 3 minutes longer. Makes 6 servings.
