QUICK CUCUMBER SALAD 
1 c. skim milk
1/2 c. low-fat cottage cheese
2 tsp. lemon juice
1/2 cucumber, cut in lg. chunks
3/4 tsp. salt
Freshly ground black pepper to taste

Combine all ingredients in a blender container and blend at low speed. Switch to high speed as cucumber becomes pureed. Chill. Makes 1 pint, plus a little extra. Garnish with chopped chives or parsley. 70 calories per cup.
