CATFISH PARMESAN 
6 skinned and cleaned catfish
2 c. dry bread crumbs
3/4 c. Parmesan cheese
1/4 c. chopped parsley
1 tsp. paprika
1/2 tsp. leaf oregano
1/2 tsp. pepper
2 tsp. salt
1/4 tsp. leaf basil
3/4 c. melted butter or cooking oil
Lemon wedges

Rinse catfish and pat dry. Combine bread crumbs, cheese, parsley, paprika, oregano, basil, salt and pepper. Dip catfish in melted butter and roll in crumb mixture. Arrange fish in well-greased baking dish. Bake in 375 degree oven for 20-25 minutes or until flakes easily. Garnish with lemon wedges. Serves 6.
