PARMESAN CATFISH 
1/2 c. all purpose flour
1/4 c. grated Parmesan cheese
3 tbsp. cornmeal
1 tsp. paprika
1/4 tsp. salt
1/4 tsp. pepper
1 egg white
1/4 c. fat-free milk
4 catfish fillets (6-oz each)

Preheat oven to 350°F. In a shallow dish, combine the flour, Parmesan cheese, cornmeal, paprika, salt and pepper; set aside. In another shallow dish, beat egg white and milk. Dip fillets in milk mixture, then in flour mixture. Place in a 13 x 9 x 2 inch baking dish coated with nonstick cooking spray.

Bake uncovered for 35 to 40 minutes or until fish flakes easily with a fork.
