FRESH STRAWBERRY BREAD | |
1 pt. strawberries 1 3/4 c. flour 1 tsp. baking soda 3/4 tsp. salt 1/2 tsp. cinnamon 1/4 tsp. baking powder 1 c. sugar 1/3 c. shortening 2 eggs 1/3 c. water 1/2 c. walnuts, chopped Softened cream cheese (optional) Preheat oven to 350 degrees. Grease a 9 x 5 x 3 inch loaf pan. Crush enough berries to make 1 cup crushed. Pour into small saucepan. Heat to boiling over medium heat. Cook one minute, stirring constantly; cool. Slice remaining strawberries. Chill. In medium bowl, combine flour, soda, salt, cinnamon, and baking powder. In large mixing bowl, cream sugar, shortening, and eggs until light and fluffy. Add flour mixture alternately with water to cream mixture, mixing well after each addition. Stir in crushed berries. Fold in walnuts. Spread batter in pan. Bake 50-60 minutes. Cool in pan 10 minutes. Remove and cool completely. Serve; cut in thin slices. Spread with cream cheese and top with reserved sliced strawberries. |
