CARROT - NUT BREAD 
1 c. sugar
3/4 c. oil
2 eggs
1 1/2 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. salt
1 1/2 c. grated carrots
1/2 c. nuts, chopped

Beat together sugar, oil and eggs. Add the flour, cinnamon, soda and salt. Then add grated carrots and nuts. Use medium loaf pan. Bake 1 hour at 350 degrees.
