CHICKEN STEAKS 
1/2 c. minced celery
1/4 c. minced green pepper
2 tbsp. butter
2 c. minced cooked chicken
1 1/2 c. bread crumbs
1/4 tsp. pepper
1/2 tsp. salt
1/2 c. milk
1 egg
1/8 tsp. onion juice

Pan fry the celery and green pepper slowly for 5 minutes in the butter. Add the remaining ingredients, beating the egg light. Form into individual "steaks"; dust lightly with flour and pan fry in fat until golden on both sides.
