HAWAIIAN CHICKEN | |
Bake or fry chicken pieces or quarters until cooked. Lay in single layer in roasting pan. Sprinkle with nutmeg and cinnamon. Pour crushed pineapple and some of the pineapple juice over the chicken. Place slices of peeled oranges, between the chicken pieces. Cover the chicken with grated coconut. Bake at 325 degrees oven until coconut browns. This gets better the longer it sets. Can cook a day ahead and rewarm. |
