INDIAN PUDDING 
4 c. milk
1/2 c. yellow cornmeal
1/2 c. sugar
3 tbsp. melted butter
1 tsp. salt
1 tsp. vanilla
1/4 tsp. ginger
1 1/2 tsp. cinnamon
1/2 c. molasses
2 eggs, well beaten

Scald milk in saucepan. Stir well. Cook in top of double boiler 20 minutes. Combine other ingredients except eggs. Add to cornmeal mixture. Then add beaten eggs. Pour into a large, greased baking dish. Bake in 350 degree oven in a water bath (set baking dish in a pan filled with about 1 inch of water) for about 1 hour. Serve warm with a scoop of ice cream. Serves 10 to 12.
