DATE PUDDING 
DRY MIXTURE:

1 1/2 c. flour
1 c. brown sugar
1 1/4 c. quick oatmeal
1/4 tsp. salt
1/4 tsp. baking soda
3/4 c. butter, melted (30 seconds in microwave)

Mix well and put 1/2 mixture in 10-inch pan.

WET MIXTURE:

1 lb. chopped dates
1 c. boiling water
1/2 c. sugar
Nuts (optional)
Lump butter

Cook until thickened. After cooked, add nuts. Spread on dry mixture and put rest of dry mixture on top. Bake 30 minutes at 350 degrees. Serve with Cool Whip. Freezes well.

Since microwave ovens vary in power, you may need to adjust your cooking time.
