SWEET POTATO AND APPLE CASSEROLE 
1/2 c. butter
6 med. sweet potatoes, peeled and sliced
1/2 c. packed brown sugar
1/2 c. broken pecans
4 lg. apples, cored and sliced

Use a little of the butter to grease a 13x9x2 inch baking pan. Arrange half of the sweet potatoes in pan. Sprinkle sugar and pecans over potatoes and dot with remaining butter. Arrange apples on top of sugar mixture and top with remaining sweet potatoes. Cover tightly with foil and bake 1 hour at 375 degrees or until potatoes are tender. Stir before serving. Yield 8-10 servings.
