SEVEN LAYER SALAD 
1 lb. fresh spinach
1 lb. cooked bacon
6 hard-boiled eggs
1 head iceberg lettuce
1 med. red onion
1 lg. bag frozen peas
3/4 c. grated Parmesan cheese
3/4 c. grated sharp cheddar
1 1/4 c. Hellmann's mayonnaise
1 c. sour cream
Salt & pepper
2 tsp. sugar

Wash spinach and layer bottom of large glass salad bowl. Sprinkle spinach with 1 teaspoon sugar. Salt and pepper. Cook and sprinkle crumbled bacon. Spread chopped eggs on top. Wash, drain then layer iceberg lettuce next. Sprinkle lettuce with 1 teaspoon sugar. Salt and pepper. Slice and layer red onion. Top with frozen (or raw) peas. Layer cheeses on top. Mix sour cream and mayonnaise. Spread evenly on top. Cover and refrigerate 24 hours ahead of time. Great to pull out for a party. A meal in and of itself! 8 servings. Prepare 24 hours ahead of time.
