TUNA AND RICE MUFFINS 
2 c. cooked rice
1 (6 1/2 oz.) tuna, drained
1 tbsp. chopped onion
2 eggs
1 c. shredded Cheddar cheese
3/4 c. black olives, sliced
1 tsp. seasoned salt
2 tbsp. milk

SAUCE:

1/4 c. melted butter
1/2 tsp. seasoned salt
1 tbsp. lemon juice

Combine rice, cheese, tuna, olives, onion and seasoned salt. Stir in eggs and milk. Bake at 375 degrees for 15 minutes.
