WALNUT STUFFED CHICKEN BREASTS 
2 c. toasted bread crumbs
4 tbsp. melted butter
1/4 c. chopped onion
Juice of 1/2 lemon
2 tbsp. parsley flakes
1/2 c. chopped walnuts
4 sm. boned chicken breasts
Salt & pepper
Water

Combine crumbs, half of butter, onion, celery, parsley, walnuts, salt and pepper to taste and water enough to moisten. Make 4 mounds of stuffing, each on a square of aluminum foil arrange on baking sheet. Brush both sides of chicken with lemon juice. Spoon remaining butter on chicken. Season with salt and pepper. Place open breast over each mound shape around stuffing, tucking sides under. Bake at 350 degrees for 45-50 minutes.
