SEASONED BLACK-EYED PEAS 
1 lb. dried black-eyed peas
2 med. chopped onions
1 sm. bay leaf
1 red pepper pod
Water
1/4 tsp. pepper
1/4 lb. crisp fried Canadian bacon
2 stalks chopped celery
1 chopped garlic clove
1 (6 oz.) can tomato paste
2 tsp. salt

Wash peas and soak 45 minutes. Drain. Pour in enough fresh water to cover peas. Add remaining ingredients. Bring to boil. Reduce heat. Cover and simmer until tender, 3 hours. Season to taste. Yield: 16 (1/2 cup) servings.
