CONSOMME RICE 
1 onion, sliced
1/2 lb. mushrooms, sliced
1 c. long grain rice
1 can beef consomme soup
1 can water
2 tbsp. butter

Saute onion in butter until slightly soft. Add mushrooms and rice and continue to saute until the rice is slightly browned and the mushrooms are soft. Add the consomme and 1 can of water. Stir and bring to a boil. Cover fry pan (an iron fry pan works best) and cook in oven at 300 degrees for 45 minutes.
