FRIED RICE 
3 tbsp. oil
1 med. onion, cut in rings
1/2 green pepper, cut in strips
1 carrot, grated
7 mushrooms, sliced
2 c. rice
2 c. water
1 tsp. salt

In a large pot over low flame heat oil, add green pepper strips, grated carrots, mushrooms and onions; fry.

While frying, wash two cups of rice (to remove impurities). Add washed rice to vegetables. Stir over medium flame until well mixed - about 2 minutes. Add 2 cups water and salt. Cover and cook until water boils away. (Do not stir or shake while cooking).
