HOMEMADE DINNER ROLLS 
4 1/4 - 4 3/4 c. all-purpose flour
1 pkg. active dried yeast
1 c. milk
1/3 c. sugar
1/2 tsp. salt
2 eggs
1/3 c. shortening, butter

Combine 2 cups of the flour and the yeast. Heat and stir milk, sugar, shortening and salt just until warm and shortening melts. Add to flour mixture plus eggs. beat for 30 seconds on low, scraping the bowl. Beat on high for 3 minutes. Stir in remaining flour. Knead dough and as much remaining flour to make smooth and elastic. Place dough in greased bowl, cover and let rise in warm place (about 1 hour). Punch dough and make rolls, let rise for another 30 minutes until double. May make round rolls or butterhorns. Before placing in oven, lightly brush with butter.

For best results use butter.
