THELMA'S CINNAMON ROLLS | |
1 c. milk, scalded 1/2 c. shortening 1 c. sugar 1/2 c. warm water 1 tsp. sugar 2 pkgs. dry yeast 2 eggs, beaten 4 1/2 c. flour Crumble yeast into warm water with sugar. Scald milk and pour over sugar and shortening. When cool enough, add yeast. Then beaten eggs and salt and flour. Mix. Beat until dough leaves the side of bowl (too soft to get into with your hands). Let rise until double. Poke down and let it rest 10-15 minutes. Prepare melted butter or vegetable shortening or butter in a pan. In another pan 1 cup sugar and 2 tablespoons cinnamon (mix). Cut pieces of dough; dip in melted fat and roll in sugar and cinnamon. Put into greased pans - they must be deep - or an angel food tin (not loose bottom) can be used. Bake at 360 degrees for 40 minutes if an angel tin is used. Otherwise 20 to 25 minutes if saucepans are used. |
