QUICK & HEALTHY CHOCOLATE CHIP
COOKIES
 
2/3 c. butter, softened
1/3 c. brown sugar
1/3 c. white sugar
1 egg
1/2 tsp. vanilla
1 c. & 2 tbsp. flour
1/4 tsp. salt
1/2 tsp. baking soda
1/2-3/4 c. semi-sweet or milk chocolate chips

(For double recipe, double everything except use 1 egg and 2 egg whites instead of 2 whole eggs.)

Preheat oven to 375 degrees. In medium bowl, mix together flour, salt and baking soda; set aside.

In mixing bowl, beat butter until creamy. Add sugars and beat until creamy. Beat in egg and vanilla. Stir in flour mixture until well blended. Stir in chocolate chips. Drop batter (about 1 tablespoon) onto lightly greased cookie sheet. Bake until lightly brown about 8 minutes. Makes about 2 dozen cookies.
