Refrigeration wasn't common and potatoes were easily spoiled so rice or cornmeal was more often served for Sunday dinner. Spoonbread was a nice substitute for mashed potatoes. Add 1 1/4 cups yellow cornmeal to 3 cups milk. Bring to boil and simmer until thick. Add: 1 tsp. salt To hot mush. Beat 3 eggs with 1 3/4 tsp. baking powder and fold into mush. Pour into ungreased casserole and bake at 350 degrees for 30 minutes. Serve in same dish with plenty of butter. |
