MINT BROWNIES 
1 pkg. brownie mix
2 c. powdered sugar
1/4 c. melted butter
3/4 tsp. peppermint extract, divided
3 tbsp. milk
Green food coloring
1 c. chocolate chips
3 tbsp. butter

Prepare brownie mix as instructed on box, except add 1/4 teaspoon peppermint extract to batter and increase eggs to two. Bake and cool completely. For the mint layer, combine powdered sugar and melted butter until crumbly, then add 1/2 teaspoon peppermint extract, food coloring, and just enough milk for spreadability. Spread on cool brownie layer. Melt chocolate chip and butter in microwave until smooth, spread on SET mint layer.

Since microwave ovens vary in power, you may need to adjust your cooking time.
