CHEESY POTATOES 
6 med. potatoes
2 c. shredded cheddar cheese
1 1/2 c. sour cream
1/4 c. butter
4 slices bacon, fried crisp & crumbled
2 tbsp. butter
1/3 c. onion, chopped
1 tsp. salt
1/4 tsp. pepper

Peel potatoes and cook until tender, allow to cool and then shred. Saute onions in 1/4 cup of butter on low heat - DO NOT BROWN - just cook on low about 8 minutes. Add cheese to onions and stir until almost melted. Remove from heat and add remaining ingredients. Fold into potatoes and place in a greased 12 x 7 inch casserole. Dot with the 2 tablespoons of butter.
