COWBOY BEAN POT | |
1 lb. dry beans, your choice 1 ham hock 1 lg. onion, chopped 1 tsp. baking soda 6 c. water 1 tsp. salt 1 (10 oz.) can green chili salsa 1 (8 oz.) can tomato sauce Rinse and sort the beans well. Cover beans with water, sprinkle the teaspoon of soda over the beans. Stir well with a spoon and soak overnight. To cook, pour off water, rinse and add the 6 cups of water and the rest of the ingredients, stirring well. Bring to a boil uncovered, reduce the heat to a gentle simmer and cover. Check beans occasionally and add enough hot water to keep beans well covered. Cook 2-3 hours or until well done. When done, remove meat from the pot. Cut meat from the bone, chop and return to pot. Serve with cornbread. Makes 6 or more servings. When adding water to a bean pot, always use scalding hot water. If you use cold water it'll make the beans tough. I don't remember where I got this recipe from, but I'm sure glad I got it, and so will you when you try `em. |
