BAKED CHICKEN AND ONIONS 
1 med. chicken, cut up
1/4 c. flour
Salt and pepper
2 lg. onions
1 carrot
1 rib celery
1 1/2 c. chicken broth
2 tbsp. oil

Heat oven to 400 degrees. Flour, salt and pepper chicken. Brown it in oil in a large skillet. Slice onions, carrots and celery. When chicken is brown place it in a large baking dish.

Saute onions, carrots and celery until the onions are tender. Put the vegetables over the chicken. Pour chicken broth over everything. Bake for 1 hour. Serve with white rice, if desired.
