ELEGANT ARTICHOKES WITH SPINACH | |
1 (10 oz.) pkg. frozen chopped spinach 1/4 c. minced onion 3 tbsp. butter, melted 1/4 c. sour cream 2 tbsp. grated Parmesan cheese 3/4 tsp. salt 1/4 tsp. pepper Dash of Tabasco sauce 1 (14 oz.) can artichoke hearts or bottoms or 2 (8 1/2 oz.) cans Cook spinach according to directions on package. Drain thoroughly. Saute onion in butter slowly until tender. Stir cooked spinach into butter and onions. Add sour cream, 2 tablespoons of Parmesan cheese, salt, pepper and Tabasco. Mix well. Place artichokes in greased casserole dish. Flatten and top with spinach mixture. Sprinkle more Parmesan on top. Add water to barely cover bottom of baking dish. Bake at 350 degrees for 15-20 minutes. |
