4 lbs. ground beef 3 lg. onions, chopped 2 cans tomatoes 1 lg. can tomato sauce 2 sm. cans tomato puree 4 tbsp. chili powder 3 tbsp. garlic powder 1 lb. cooked red beans Cook meat and onions in a little fat or oil until meat loses its redness. Add the rest of the ingredients except the beans, plus a little water, and cook slowly for 30 minutes. Add the cooked beans (and enough water to make a good chili consistency) and cook 50 minutes more. Serves 16 to 20. Serve FIESTA as a buffet meal. Arrange serving dishes in the following order. Ask guests to put a layer of chips on their plates, topped with a layer of rice, then chili, and so on until they have 10 layers on their plates. Order of serving dishes. 1. crushed fritos chips 2. steaming hot rice 3. chili 4. shredded Cheddar cheese 5. shredded lettuce 6. chopped tomatoes 7. chopped onions 8. shredded coconut 9. chopped pecans 10. chopped black or green lives Fiesta is a very filling meal. One needs only cokes, a side dish or tortilla chips and perhaps a dessert of pralines or sherbet to fill the hungriest crowd. |
