DOROTHY'S EXPANDABLE RICE SALAD 
Rice, 1 c. uncooked for each 6 servings
Scallions
Green & black olives
Peppers (red, green, yellow)
Any other vegetables such as carrots, cucumbers, broccoli, green beans, onions

VINAIGRETTE (for each cup of uncooked rice) :

3 tbsp. oil
2 tbsp. malt vinegar (important)
1 tsp. sugar
1 1/2 tbsp. grated onion
14 shakes garlic powder
10 shakes white pepper
7 shakes cayenne pepper
A dash of cumin

Cook rice. Marinate in the vinaigrette until cool. Chop the vegetables into small pieces. Mix into the rice. Serve.
