SWEET POTATO PIE | |
3-4 lg. sweet potatoes (about 2 1/2 lb.) 1 tall can Pet milk 1/2 c. butter, softened 2 c. sugar 4 eggs 1/2 tsp. nutmeg 1/2 tsp. salt 2 deep or 3 shallow 9" unbaked pie shells 1. Cook potatoes in boiling water until fork easily pierces potato. Cool slightly, remove skins. 2. Place cooked potatoes in large mixing bowl. Mix with electric mixer until smooth. There should be about 3 1/2 cups of mashed sweet potatoes. 3. Stir in butter and sugar. Beat in eggs, one at a time. 4. Mix in nutmeg, salt and Pet milk. 5. Pour into unbaked pie shells. If using thin foil plates, set on cookie sheet. Bake at 425 degrees for 20 minutes, lower heat to 325 degrees. Bake 30 to 45 minutes longer, until knife inserted near center comes out clean. Cool. Can serve with meringue or whipped topping, or just plain. |
