SHRIMP GUMBO 
2 strips bacon, fried
2 tbsp. Wesson oil
2 onions, chopped
4 ribs celery, chopped
1 green pepper, chopped
1 can tomatoes
1 can okra
1 lb. shrimp or more, cleaned and boiled
1 bay leaf
1 tbsp. chili powder
1 tbsp. file
1 tsp. salt
1 tsp. sugar
1 tbsp. vinegar
1 c. water

Cook onions, celery, and pepper until done in oil. Add flour and seasonings; slowly add water and cook 15 minutes. Add tomatoes and vinegar. Let stand 1 hour.

Add shrimp and cook 5 minutes. Serve over cooked rice. Serves 4.
