CHOCOLATE TRUFFLES 
1/2 c. powdered sugar
1 c. butter, softened
1 1/2 tsp. vanilla
1/4 c. powdered sugar
2 tbsp. unsweetened cocoa
1 oz. unsweetened chocolate, melted
2 1/4 c. flour
1/4 tsp. salt
1 c. semi-sweet chocolate chips

Beat 1/2 cup powdered sugar and butter until light and fluffy. Add vanilla and chocolate and blend well. At low speed, blend in flour and salt. By hand, stir in chocolate chips. Shape into 1 inch balls and place on greased cookie sheets. Bake at 375 degrees for 10 to 12 minutes. Cool completely. In a small bowl, combine 1/4 cup powdered sugar and cocoa. Roll cooled cookies in cocoa mixture. Makes 4 dozen cookies.
