PINEAPPLE CAKE 
2 c. self-rising flour
2 c. sugar
2 eggs
1 (#2) can pineapple, do not drain

ICING:

1 1/2 c. sugar
1/2 c. butter
1 c. pecans
1 c. coconut
1/2 tsp. vanilla
5 oz. can evaporated milk

Do not preheat oven! Mix flour, sugar, eggs and pineapple. Bake 30 to 35 minutes at 350 degrees.

Bring to a boil sugar, butter and evaporated milk. Boil 3 minutes and add pecans, coconut, and vanilla. Pour over warm cake. Cool to serve. Very moist!
