BLACKEYED PEA MEDLEY 
2 (15 oz. each) cans blackeyed peas, rinsed and drained
1/2 c. red onion, chopped
1/2 c. chopped green peppers
1 sm. garlic clove, minced
1 tsp. sugar
1/4 c. vinegar
1/4 c. vegetable oil
1/2 tsp. salt
Dash pepper
Dash hot pepper sauce

Combine peas, onion, green pepper and garlic. Stir together all other ingredients and pour over vegetable mixture. Chill covered 12 hours. Serves 8.
