MICRO BRITTLE | |
1 c. raw peanuts, pecan halves, almonds or cashews 1 c. granulated sugar 1/2 c. white corn syrup 1/8 tsp. salt 1 tbsp. butter 1 tsp. baking soda 1 tsp. vanilla Stir together nuts, sugar, syrup and salt in a 1 1/2 quart casserole dish. Place in microwave oven and cook 7 to 8 minutes on high, stirring well after 4 minutes. Add butter and blend well. Return to oven and cook 2 to 3 minutes more on high or until nuts are golden brown. Add baking soda and vanilla; gently stir until light and foamy. Pour onto greased cookie sheet and let cool. When cool, break into pieces and store in air tight container. |
