COLD BEET PICKLES 
1 gallon cooked beets
1/3 c. prepared mustard
1/3 c. salt
2 1/2 c. brown sugar
3 c. vinegar
1 c. cold water

Cook beets. Remove skins. Slice and quarter beets. Place in gallon jar. Mix well remaining ingredients. Pour over beets. Store in cool place, they will keep a very long time.
