SCALLOPED HAM 
4 hard-cooked eggs, finely chopped
3 c. white sauce
2 c. diced, cooked ham
1 c. (or more) butter cracker crumbs (Ritz, Town House, etc.)

Sprinkle bottom of baking dish with part of crumbs; cover with half the eggs, then with sauce, then meat. Repeat and cover with remaining crumbs. Bake at 375 degrees until crumbs are slightly brown.

WHITE SAUCE:

4 tbsp. butter
4 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
2 c. milk
