SCALLOPS WITH MUSHROOMS 
1/2 c. butter
1 c. thinly sliced mushrooms
3 tbsp. finely chopped green onions
1 tbsp. finely chopped garlic
1 lb. fresh bay scallops
1 c. soft bread crumbs
1/2 c. finely chopped parsley
Salt and pepper

Preheat oven to 450 degrees. Melt 1/4 cup of butter in a skillet and add mushrooms; saute until mushrooms are wilted and give up their liquid. Add green onions and garlic; cook briefly. Remove from stove and cool slightly. Add 2 tablespoons of the remaining butter, the scallops, 3/4 cup of the bread crumbs, parsley, salt and pepper. Blend well.

Spray 6 seafood shells (or a shallow baking dish) with non-stick spray coating and fill with mixture. Place filled shells or baking dish on cookie sheet. Sprinkle remaining bread crumbs on top. Melt remaining 2 tablespoons butter and pour over tops. Place in oven and bake for 10 minutes. Put under broiler until nicely browned, 1 to 2 minutes. Serves 6.
