CORN CASSEROLE 
3 green onions, chopped
1 bell pepper, chopped
1 can whole kernel corn, drained
1 can cream style corn
1 c. shredded cheddar cheese
2 eggs, beaten
1 stick butter
1 box Jiffy corn muffin mix
salt and pepper, to taste
1 jalapeno pepper, diced, optional

Microwave butter, onions and bell pepper for 5 to 6 minutes. Mix eggs, corn and muffin mix. Combine all ingredients except cheese and pour into greased baking dish, Pam is recommended. Sprinkle with cheese.

Bake at 400°F for 30 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
