FRESH PEACH PIE 
1 c. sugar
2 rounded tbsp. cornstarch
1 c. water
1 (3 1/2 oz.) pkg. peach Jello
Sliced peaches (very ripe - 3 or 4)
1 (9 inch) single pie crust, baked
Cool Whip or whipped cream

Cook sugar, cornstarch, and water until thick. Remove from heat. Add Jello, stirring until dissolved. Cool. Fold in sliced peaches. Pour into shell. Refrigerate. Top with whipped cream (or Cool Whip) just before serving.
