HONEY YEAST ROLLS 
2 pkgs. active dry yeast
1 c. lukewarm water
3 1/2 - 4 c. flour
1 tsp. salt
butter, melted
1 egg, beaten
2 tbsp. honey

Dissolve yeast in water. Combine 2 cups flour and salt. Add dissolved yeast, 1/4 cup butter, egg and honey; beat until smooth. Stir in enough remaining flour to form a stiff dough. Place dough in greased bowl, brush with butter. Cover; let rise in warm place about 20 minutes or until double in volume. Punch down; with oiled fingers shape into 1" balls. Place 3 balls in each greased medium size muffin cup. Cover; let rise until double volume, about 400 degrees, 12 to 15 minutes or until lightly browned. Brush with additional honey, if desired. Approximately 2 dozen.
