4 c. flour 1/2 c. sugar 1 tsp. salt 4 tsp. baking powder 1 c. shortening or butter 2 eggs 1 c. or more milk 1 c. currants Mix together flour, sugar, salt and baking powder. Cut in shortening or butter (I use butter) until mixture looks like coarse cornmeal. Add currants. Beat eggs and combine with milk. Make a hole in dry ingredients and add egg and milk combination. Stir with fork until all dry ingredients are moistened. Dough should be soft. Gather dough into small ball; knead. Roll or pat into a round shape, about 5" across, 1/4" thick and cut with a knife into 4 pieces or you may cut with a biscuit cutter if you prefer. Place on ungreased baking sheet and bake at 425 degrees for about 10 minutes. |
