CHRISTMAS DATE CAKE 
1 lb. pecans, broken up coarsely
1 1/2 lb. pitted dates, cut up
5 rings candied pineapple
1 med. jar maraschino cherries (save juice)
4 eggs
1 c. sugar
1 c. flour
2 tsp. baking powder
1/4 tsp. salt

Mix all dry ingredients; add beaten egg yolks. Mix well. Add fruit, nuts and cherry juice; add stiffly beaten egg whites last. Bake in loaf pans (wax paper lined) in a slow oven for about 2 hours. Decorate tops of loaves. Serve with whipped cream or caramel sauce.
