HEARTY CINNAMON & WALNUT OATMEAL | |
1/2 cup skim milk (or water) 3/8 cup oatmeal 1/8 cup raisins 1/8 cup chopped walnuts* 1 tsp. cinnamon dab of butter 1 tbsp. brown sugar 1 tbsp. lite Cool Whip (optional) Note: May substitute your favorite kind of nut - cashews, almonds, even peanuts! All should be chopped. In a saucepan, boil milk (or water). In a bowl, mix raisins, nuts and cinnamon. Add oatmeal to saucepan, stir for 10 seconds then add raisin and nut mixture. Stir for at least 1 minute until it reaches desired consistency. Note: It shouldn't be too runny, but if you like that way than I suggest starting with 3/4 cup liquid. Finally, remove from heat and pour into serving dish. Add brown sugar and dab of butter and some Cool Whip, if desired. Note: If you're dieting, the raisins should be sweet enough, and you can omit the last three ingredients. Submitted by: Eliot W. |
