CHICKEN MINESTRONE 
3 boneless, skinless chicken breasts
16 oz. can chicken broth or bouillon cubes
1 can garbanzo beans
1 c. frozen mixed vegetables
1 c. gnocchi pasta
1 bay leaf
16 oz. can baby corn
1/4 tsp. pepper
2 qts. water

Using a big pot, simmer chicken in chicken broth until tender. Remove chicken, cool and cut into 1 inch pieces. Return chicken to pot. Add hot water, bay leaf, vegetables, uncooked pasta, pepper. Cook until frozen vegetables and pasta are tender. Add baby corn and beans, finish cooking, about 10 minutes. Serve with Wasa fat free crispbread.
