SIMPLE SIMON BARS 
DOUGH:

12 c. flour, sifted
6 c. brown sugar, packed
12 c. rolled oats
6 tsp. salt
4 c. butter

Sift flour and salt together. Place in mixer and blend in brown sugar. Cut in butter until mixture is the size of small peas. Add the rolled oats and mix; set aside.

FILLING:

9 1/8 c. applesauce
1 1/2 tsp. nutmeg
1 1/2 c. sugar, granulated
8 1/2 c. fig or raisins
3/4 tsp. cinnamon
2/3 c. butter

In a separate mixing bowl, combine the applesauce, figs or raisins, nutmeg and cinnamon.

Spread 11 cups of dough evenly on the well-greased sheet pan. Spread filling evenly over the dough. Sprinkle with granulated sugar and dot with butter. Put on the remaining 8 cups of dough to cover filling. Bake 45-50 minutes until golden on top. Cool on wire rack. Cut 14x7. Serves 98 (2 1/2 x 1 3/4-inch) bars.
