GOOSE DAY PUMPKIN CAKE | |
Sift together: 2 c. flour 2 tsp. baking soda : 1 1/2 c. pumpkin 1 tsp. salt 2 tsp. cinnamon : 1 c. chopped walnuts (optional) Beat together until pale yellow in color. 3/4 c. Crisco oil 4 eggs 2 c. sugar 2 tsp. vanilla To oil/sugar mix alternately add dry ingredients and pumpkin; beat well. Grease and flour 1/2 sheet sized cake pan. Spread batter in pan and sprinkle 1/2 cup chopped walnuts on top. Bake at 350 degrees for 45-50 minutes. Cool completely. TOPPING: 1 lb. powdered sugar 1 tbsp. vanilla 1 stick butter 8 oz. softened cream cheese Beat butter and cream cheese until fluffy. Gradually add powdered sugar. Spread on cake and sprinkle with remaining chopped walnuts. |
