SALMON PATTIES 
1 can salmon
2 eggs, beaten
1 med. carrot, grated
1/4 c. seasoned bread crumbs
2 tbsp. green onions, sliced
2 tbsp. parsley
1/8 tsp. pepper
2 tbsp. olive oil

Drain and remove skin from salmon. Break up with fork. Mix in rest of ingredients well. Heat olive oil in pan. Form mixture into 4 patties. Fry in olive oil until golden brown on both sides.
