CREAM OF BROCCOLI AND CHEESE
SOUP
 
1 c. finely chopped onion
10 oz. pkg. chopped broccoli
2 c. whole milk
1 c. cottage cheese
1 c. cream of chicken soup, undiluted
1/2 tsp. salt

Cook celery, onion and broccoli in 2 1/2 quart covered casserole dish in microwave on HIGH for 6 minutes, stirring after 3 minutes. Set aside. Blend cottage cheese in blender or food processor until very smooth; slowly add milk while continuing to blend. Add chicken soup to cheese and milk mixture. Blend; add mixture to cooked, undrained vegetables. Microwave on HIGH until heated through (about 3 minutes) without boiling. Add salt and pepper.

Since microwave ovens vary in power, you may need to adjust your cooking time.
