HEART-EASY SUMMER SOUP 
2 c. chopped green beans
2 c. chopped romaine lettuce
2 c. chopped zucchini
2 c. peas
1/2 c. minced onion or shallot
1/3 c. chopped parsley
5 c. canned chicken broth, fat free
Minced cucumbers, as needed (optional)
Sprigs of rosemary (optional)

Simmer vegetables in broth until tender, about 15 minutes. Puree. Season with freshly ground pepper and a little salt, if needed. Chill. Serve with a sprig of rosemary and a generous topping of minced cucumber. 60 calories per serving and no fat.
